Sweet Treat Peanut Butter Potstickers

These cute lil’ fellas were born from an excess of wrappers when I finished making my Chicken Satay Potstickers with Curry Dipping Sauces.  As usual my fickle mind couldn’t choose one filling so I went with three variations.  Try your own combinations and post them in the comments! (or don’t, its cool, who likes participation and creativity anyway)

Ingredients:

  • 16 pot-sticker/gyoza wrappers
  • 1 egg, whisked
  • filling of your choice (see below for options)
  • 2 tablespoons clarified butter
  • powdered sugar, to serve
  • peanuts, chopped, to serve

Lay out wrappers and fill middles with quarter sized dollops of filling.  Rub egg wash around the perimeter of the wrapper (this works as glue).  For square shaped wrappers, fold top to bottom to form a triangle, then fold in each corner so it looks like it is hugging itself.  Happy snuggly dumplings.  For circle-shaped wrappers, fold in half and then crimp three times to seal.  Heat butter in a large skillet over medium-low heat and add potstickers.  Let cook slowly on one side until crispy, then flip and crisp other side.  Serve with powdered sugar and chopped peanuts.

PB & Banana Filling:

  • 1 medium banana, mashed
  • 1/2 cup chunky peanut butter

Mix together until combined.  Yields filling for about 16 pot-stickers.

Dark Chocolate & PB Filling:

  • 6 Dove dark chocolates
  • 3/4 cup chunky peanut butter

Mix together until combined.  Yields filling for about 16 pot-stickers

PB & J Filling:

  • 1/2 cup seedless jam/preserves (I recommend black raspberry)
  • 1/2 cup chunky peanut butter

Mix together until combined.  Yields filling for about 16 pot-stickers

Bonus Vegan Version:

  • substitute soy milk for the egg yolks.  The protein will provide a seal.
