Green Tea Cupcakes with Honey Buttercream Icing

As featured in blog post #6: The Grace of Green Tea.


Eat Cake! Drink Tea! At the same time!  These little guys pack a ton of green tea flavor in one fluffy bite.  The secret is in the matcha.  Matcha powder is finely ground green tea that is perfect for infusing baked goods.  You don’t need to steep it, simply add it to liquids in a recipe and mix until combined.  Enjoy 🙂


Green Tea Cupcakes:

  • 1 stick butter, softened
  • 1 egg + 1 egg yolk
  • 1 ½ cups flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons matcha (green tea powder)
  • ½ cup milk


Beat softened butter with a handheld mixer or in a mixing bowl (look who is fancy, eh?) until light and airy.  Add one egg, incorporate fully, then add yolk and mix.  In a separate bowl, mix together flour, sugar, baking powder, and salt. In another bowl (I know, so many dishes. I’m sorry), whisk together the matcha and milk until no lumps remain.  Tip about 1/3 of flour mixture into the mixing bowl and combine.  Then pour in half of the now-green milk and blend. Beat in another 1/3 of the flour, the rest of the milk, and then end with the last round of flour.  At this point all should be combined into a thick but somewhat runny batter.  Spoon into wrappers in a muffin tin – you should be able to get 12 cupcakes.  Bake at 350F until done, around 15-20 minutes


Honey-Buttercream Icing:

  • 1 stick butter, softened
  • 1 tsp lemon zest
  • 1/2 tsp ginger root, grated
  • 4 cups powdered sugar
  • 4 tablespoons half and half
  • 1/4 cup honey, plus extra for garnish


Beat butter, lemon zest, and ginger root in mixer until combined.  Add in the powdered sugar and mix on low (or you will be showered in sugar dust).  Once sugar is combined evenly into the butter, add in the half and half and honey.  Mix on medium for 3 minutes and turn off mixer.   Ice the cupcakes once cooled and drizzle with honey to serve.  Bon app!
