Bison Sliders with Nutella BBQ Sauce


Nutella BBQ Sauce

  • 1/2 cup Nutella
  • 2 1/2 tablespoons apple cider vinegar
  • 1 tablespoon tomato paste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/16 nutmeg
  • 20 drops liquid smoke
  • salt, to taste
  • black pepper, to taste

Combine all ingredients until well mixed.  Yields about 3/4 cup of sauce.

Crispy Fried Onions

  • 1 onion, very thinly sliced
  • 2 tablespoons flour
  • 1/4 tsp paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • salt

Combine flour, paprika, garlic powder, and black pepper.  Toss onions in the flour until coated.  Heat oil in a medium sized frying pan on medium and add 1/2 of the onions.  Fry for about 5 minutes or until golden brown, stirring several times.  Remove onions from oil and place on paper towels to drain, sprinkling with salt.  Repeat with the remaining onions until all are fried, then set aside to serve with burgers.


  • 1 lb ground bison meant
  • 1 batch Nutella BBQ sauce, above
  • 1 batch crispy fried onions, above
  • 2-3 tomatoes, thinly sliced
  • salt, to taste
  • black pepper, to taste
  • 8 slider rolls

Portion out bison meat into 2 oz. patties and season with salt and pepper.  Grill patties for about 3 minutes on each side on a hot grill, flip, and grill another 3 minutes.  Build burgers by stacking a few tomato slices, a bison patty, a spoonful of Nutella BBQ sauce, and crispy fried onions.  Bon app y’all.
